White Chocolate Chunk & Macadamia Nut Cookies
¾-cup firmly packed brown sugar
½-cup butter, softened
1-egg
1 ½-tsp vanilla
1 1/3-cup all-purpose flour
½-tsp baking powder
½-tsp baking soda
½-tsp salt
2 (3oz)-bars of white chocolate, cut into ½” pieces
¾-cup salted macadamia nuts, coarsely chopped
Heat oven to 350°F
In a large mixing bowl, combine brown sugar, butter, egg, and vanilla
Beat at medium speed, scraping bowl often, until well mixed, about 1-2 minutes
Reduce speed to low
Add flour, baking powder, baking soda, and salt
Continue beating for 1-2 minutes, scraping bowl often
Stir in white chocolate and nuts by hand
Drop rounded spoonfuls, 2” apart onto greased cookie sheet
Bake for 9-12 minutes or until lightly golden
Cool 1 minute
Remove from cookie sheets
Makes 24
